HOLY Guacamole

I’m ready for a tan and a margarita. And bathing suits and boats. Okay, so maybe I’m dreaming of warmer weather, or maybe I just love summer. But with all these snow and ice forecasts on the radar, I can’t help but be pretty pissed at that groundhog. Ugh…

I’m ready for warm weather foods like guacamole. Luckily, I can get avocados year round, so I did.

Guacamole is the best and healthiest little snack that takes around 5 minutes to make. I don’t like fancy guacamole. Well, that’s not true. I like any guacamole I can get. But when I make it, I keep it simple.  So here’s my recipe for the best and most simple guacamole.guacamole Ingredients:

  • 2 ripe avocados
  • Juice of 1/2 lime
  • 1tbsp cilantro
  • 1/4 small onion diced
  • 1/4 c. green onion
  • salt and pepper to taste

Directions: Mix all that together with a fork to break up the avocado. Garnish with sea salt and cilantro.

And that’s it! It is super simple. It is pretty tasty and it is healthy. I don’t need tomatoes or garlic. I love the flavor of avocado enough that I never think guac needs much more. Avocados are great for you, and with a handful of chips or even carrots, it’s a super easy snack. So, since it’s still chilly outside and I can’t wear shorts and flip flops yet, I’ll just make guacamole to make it feel like summer. Ahhhh…..photo-2
